A Kelowna bakery is fundraising Tuesday in memory of Bailey McCourt, who was murdered early this month.
‘Cupcasions’ owner Libbie Philips says all proceeds from ‘Bailey’s Day’ will go to McCourt’s two daughters.
She hopes the day will be a catalyst of change on what she believes is a failure on the justice system’s handling of intimate partner violence cases.
McCourt’s estranged husband, James Edward Plover, is accused of viciously attacking her and another woman on July 4, just hours after he was convicted of assault by choking and uttering threats, related to a separate incident in 2024.
“We don’t want Bailey’s passing to be in vain,” said Philips.
“I hope that people will do what they can to start to orchestrate some change. They’ll support the little girls and come in with donations as best they can, or whatever they can, even if it’s a cup of coffee, it’ll all go towards those little girls. But big picture, do whatever they can to help make as big a noise that we need change. We need Bailey’s passing to make a change”

Philips’ bakery is where she first met McCourt back in February of 2022. She says McCourt came in to choose cupcakes and a cake for her wedding, when they developed a personal connection, describing her as a woman who lit up a room when she arrived.
“She had a bright, vibrant smile. She was happy. She was an amazing mom. She loved her daughters and she was just a really bright light.”
‘Bailey’s Day,’ held at Cupcasions, runs from 8 a.m. to 5 p.m.
